### Ingredients
- 1 oz. mild blue cheese, room temperature
- 2 Tbsp. unsalted butter, room temperature
- 1 garlic clove
- Kosher salt
- Freshly ground black pepper
- 2 thick slices of bread, toasted
- 1 large heirloom tomato, sliced
- Sea salt
- Mixed tender herbs, coarsely chopped
### Instructions
1. **Prepare the Blue Cheese Butter:**
- Using a fork, smash together the blue cheese and butter in a small bowl until well combined.
2. **Add Garlic and Seasoning:**
- Finely grate the garlic clove into the bowl using a Microplane. Add a small pinch of kosher salt and season with freshly ground black pepper. Mix well.
3. **Toast the Bread:**
- Toast the slices of bread until they are golden and crispy.
4. **Assemble the Tomato Toast:**
- Spread the blue cheese butter over the toasted bread. Top with slices of heirloom tomato. Season with sea salt and more black pepper. Garnish with a scattering of coarsely chopped mixed tender herbs.
