- 1/2 Tbsp. tomato paste
- 1/2 cup sweet chili sauce (such as Mae Ploy)
- 2 Tbsp. ketchup
- 1/2 Tbsp. hot sauce
- Vegetable oil (optional)
### Instructions
#### Ribs
1. **Prepare Spice Mix:**
- In a small bowl, mix the salt, curry powder, garlic powder, crushed red pepper flakes, lime zest, black pepper, ground ginger, and turmeric.
2. **Season and Wrap Ribs:**
- Sprinkle the spice mixture all over the rack of pork spareribs (1.75–2 lb. total).
- Scatter the thinly sliced onion over a large sheet of aluminum foil. Set the rack of ribs on top and wrap tightly, using more foil if needed to cover completely.
3. **Cook Ribs in Air Fryer:**
- Preheat the air fryer to 300°F.
- Place the wrapped ribs in the air fryer basket and cook for 25 minutes.
- Remove the ribs from the air fryer, unwrap them, and discard the foil and onions. Increase the air fryer temperature to 400°F.
- Place the unwrapped ribs back in the air fryer basket and cook for an additional 10-15 minutes until tender and a slight crust forms.
#### Glaze and Assembly
4. **Prepare Glaze:**
- Heat the butter or coconut oil in a small saucepan over medium heat on the induction stovetop until melted and starting to bubble.
- Add the curry powder and cook, stirring, until fragrant, about 45 seconds.
- Add the garlic and onion; cook, stirring constantly, until fragrant, about 2 minutes.
- Add the tomato paste and cook, stirring often, until slightly darkened in color, about 3 minutes.
- Stir in the sweet chili sauce, ketchup, and hot sauce, and bring to a simmer. Reduce heat to low and simmer gently until thickened, 8–10 minutes.
5. **Glaze Ribs:**
- Using a spoon, evenly coat the tops of the ribs with the glaze. (You might have a little left over depending on the size of your ribs.)
- Return the glazed ribs to the air fryer basket and cook at 400°F for an additional 5-7 minutes until a glossy crust forms.
6. **Serve:**
- Transfer to a cutting board and cut between the ribs to serve.
